Aluminum (Uncoated)

Bare aluminum is reactive. Acidic foods like tomatoes, citrus, and vinegar can leach small amounts of aluminum into food during cooking. Most modern aluminum cookware is anodized (hardened) or coated, which eliminates this issue — but cheap, uncoated aluminum pots are still common in discount stores.

Plastic Components Near Heat

Handles, lids, and seals made from low-grade plastics can off-gas at high temperatures. Look for heat-rated silicone or stainless steel components on anything that gets near a burner.

Low-Grade Stainless Steel

Not all stainless is equal. 18/10 stainless (18% chromium, 10% nickel) is the food-safe standard used in professional kitchens. Cheaper grades use less nickel, which makes them more reactive and prone to pitting over time.

  • 18/10 stainless steel for metal cookware
  • Lead-free and cadmium-free for ceramic glazes

Reputable sellers will list these specs clearly. If a product page doesn't mention material certifications at all — that's a signal.

Titanium Ceramic: Why It's Becoming the New Standard

Titanium-reinforced ceramic coatings have emerged as one of the most durable, food-safe non-stick options available. Here's why:

  • No PTFE, no PFOA — the coating is mineral-based, not chemical-based
  • Harder surface — titanium reinforcement makes it significantly more scratch-resistant than standard ceramic
  • Higher heat tolerance — handles higher temperatures without degrading
  • Easier to clean — the smooth surface releases food without heavy oil

The tradeoff: quality titanium ceramic costs more to manufacture, which is why you won't find it at rock-bottom prices. When you see it priced suspiciously low, check whether it's actually titanium-reinforced or just standard ceramic with a marketing label.
